Nankhatai- Eggless Indian Cookies


Nankhatai -eggless indian cookies might be well know by the people of Chennai who travel by the sub urban train,it just melts in your mouth.The main difference of this cookies from other is this made by ghee( clarified butter).





When my daughter was in nursery school I use to pick her up from school and return by train.While in train many people would sell this nankhatai( they call by ghee(nei) biscuit).My kid would ask for it as she likes it the most and to say the truth it will be awesome.If u get a chance to travel by local sub urban train in Chennai,try to taste  some biscuit.Days fly faster,now my daughter is in middle school,yesterday we went out and had  a chance to come by train,when we saw people selling it we just recollected our memories.On returning home I made this immediately.


Ingredients:

Recipe source: Homely food

 Preparation time: 15 min.
 Baking time- 10-15 min

  • Maida/flour- 1 cup
  • Castor or powdered sugar- 1\2 cup
  • Baking powder- 1\4 tsp
  • Ghee/clarified butter- 1\2 cup
  • Nuts to garnish (optional)
  • Cardamom powder-1\2 tsp


Method:

1.Pre heat your oven at 150c for 10 min.

2.Sieve flour with baking powder ,add cardamom powder to it.

3.Add ghee to the flour mix,first it resemble like bread crumbs,keep adding ghee until u get a soft pilable dough.(it consumes more ghee).

4.Once you get a soft dough,pinch a small ball out of it roll it with your hand and slightly press it with your hand .Place it on the greased tray.Press the nut of your choice.


 
5.Bake the nankhatai on a pre-heated oven for 10-12 min at 150C.change the sides of the tray between for even baking.



6.Remove from oven and cool it on the wire rack.

7.Once cooled well transfer to air tight container.

Serve with your tea /coffee.
