Try using flax egg. 1 tablespoon of flaxseed meal with 2.5tbs of water and let it sit for 10 minutes until egg consistency.

I tried this by halving the recipe…but using 2 bananas, a flax egg and the same amount of Greek yogurt…It worked well! I tried a slice. Also, used strawberries so used 1 cup of sliced strawberries….now to see if baby likes it!

He loved the loaf. Not a fan of the muffins though. He just doesn’t really seem to like egg, no matter what form I give it to him in – fried, scrambled on bread with spinach (another recipe of yours I had tried). But hey, I like them!

On a bit of a roll today because this is the third of your recipes that I have made today (also made eggy muffins and those coconut ball thingies).

Love this loaf. Had to make it gluten and dairy free (so used gluten free flour and coconut yoghurt) but it was still fantastic.

Love your blog too. Pretty much everything my son eats now comes from your website. You should make a blw cookery book – I’d buy it!
