Mostly we waste the skin of many vegetables,but we can use it many ways.One way of using it is we can make chutney like this with it.I learnt this from my sister-in-law.
1.Cucumber peel-of 2 full
2.Tomato -1\2 or 1
4.Salt to taste.
1.Wash the skin well.
2.Cook it with tomato,garlic with enough water till the skin is cooked.
3.Cool it and grind well with salt.
This chutney doesn't need tempering.
This can be used as side with hot rice.
Same method we can use the skin of Ridge gourd/peerkangai also.
