Adhirasam is one of the famous sweets i think which i made in all religion for their festival,its one of my favourite.Mostly now a days people buy them shop,as it very easy,me too the same.This is the first time i tried and it came out quite well.
In our side i.e. in kannya kumari we make it with a hole in centre.
- Raw rice- 1 1\2 cup
- Jaggery-1 1\4 cup
- Dry ginger pwder- 1 tsp
- sesame seeds-1\2 tsp( optional)
- Oil to fry
1.Soak rice in water for 2 hrs.Drain water well ,spread on a cloth and dry it for 30 min.
2.Grind to a fine powder in mixie,Sieve it ,if there were lumps.Grind again the sieved rice.Like wise do for all the dried rice.
3.Mix ginger powder to it and keep.
4.Make jaggery syrup.first allow it to mix well in water,filter to remove impurities and again boil the jaggery syrup,the consistency needed is soft ball consistency(ie when u add few drops in bowl of water it wont get dissolved and you will be able to gather it with your fingers and form a loose ball.
5.Switch off the flame,add the syrup to the rice flour ,sesame seeds(if using)and mix well ,(don't add all syrup see accordingly and add).Make a dough consistency.
6.Keep the mix covered overnight (I kept for 36 hrs).
7.Heat oil in pan,take lemon size dough,flatten in a greased sheet and drop in hot oil.
8.Carefully turn other side and cook well.
9.While taking out press the excess oil with two ladles and drain in tissue.
10.Cool and store.
Delicious adhirasam is ready.
1.Don't cook for more time,it may become harder,cook in low flame.
2.Powder the rice to a fine powder.
3.The syrup consistency is very important for adhirasam.
