As christmas is nearing I want to try plum with & without egg. I searched many blogs and tried this eggless version first.Next I have decided to make a rich plum cake using brown sugar,egg and butter. Will post if I get a good result in it.
- Maida- 1 cup
- Powdered sugar- 1 cup
- Oil- 1\2 cup(i used olive oil)
- Spice powder-1\2 tsp(nutmeg,clove& cinannom)
- Baking powder-1\2 tsp
- baking soda- a pinch
- Vinegar-1\4 tsp.
For caramel syrup:
water- 1tbsp + 1\2 cup
Heat sugar with 1 tbsp water,it will become brown, meanwhile heat some water and keep ready.When the sugar sticks& crackle, switch off and add hot water.This is ur caramel syrup.
1.Sieve flour with b.powder & spice powder.
2.Soak the fruits in apple juice.Mix baking soda with vinegar.
3.Pre heat ur oven.Mix nuts & fruits with some flour.
4.Beat oil/butter with powdered sugar well,then add flour mix, caramel syrup and beat well till all flour is added.
5.Then add the flour coated nuts&fruits to it.Don't beat after adding.
6.Then pour the batter on a greased pan and bake it middle rack for 35-45 min at 180 deg C or till a tooth pick comes out clear.
7.Cool on the wire rack.
1.U may add 1\4 tsp vanilla essence.
2.If using brown sugar no need to caramelisation.
