For this month eggless baking group Gayathiri suggested a pie recipe and it was happy to bake it.After i join the group i have started trying out these and exploring new recipes thanks to the group.I referred many sites to made this.The filling depends on your wish,i made little white sauce and mixed the corn it with spices.
For the pie crust:
- Flour/Maida- 1 1\2 cup
- Cold butter- 1\4 cup
- Baking powder- 1\4 tsp
- Salt - 1\4 tsp
- Sugar- a pinch
- Ice water- as needed
For the filling:
- Boiled corn kernels- 1 cup
- Cheese- 1 big cube(i used amul)
- olive oil- 1\2 tsp
- Milk- 1 tbsp
- Flour- 1 tsp
- Red chilli flakes /Chilly powder- 1\2 tsp
- pepper powder- 1\4 tsp
- Salt to taste.
How i made:
For the crust:
1.Take flour,salt,sugar,baking powder in a bowl,add the cold butter to it and mix it till it resembles bread crumbs.
2.Add ice water to it and mix together till it form a dough.Keep it in fridge for haft to one hour.
Lets make the filling.
In a wok heat olive oil, flour and milk ,and mix till it form a sauce consistency add pepper powder,red chilly flakes,salt and cooked corn kernels and mix well.Saute for 2-3 mins and switch it off.Filling is ready.
3.Take the dough out,with some of it roll it ,cut into circles and press it inside the pie pan( i didn't have it so use my muffin pan).Press it well on down and sides.Fill each of it with white channa/uncookked rice/raw rajma(this is to prevent it from puffing it while baking) and bake it in a pre heated oven for 10 mins at 180 deg C.
4.Take the pan out,remove the raw channa and fill each muffin pan with the prepared filling.Grate cheese over each of it.
5.With the remaining dough make small circles that fit each mini pie and close it.Brush on top with milk and pierce it with fork.
6.Bake it for 20 mins or till it form light golden color.
7.Cool it well and enjoy.
