For the June month's egg less baking group challenge, Priya Suresh of Priya's Versatile recipes suggested this Jam swirled muffins .Baking a cake/muffins is always fun at home and same was with this jam swirled muffins too. The jam is used here is ready-made mixed fruit jam, the muffin was soft, moist and yummy. Try it. For egg replacement, I just add a little more yogurt.

Makes: 6 cupcakes
- Flour- 1 & 1\4 cup
- Granulated sugar- 1\2 cup
- Baking powder- 1 tsp
- Baking soda- 1\2 tsp
- salt a pinch
- yogurt- 1 cup
- Vanilla essence- 1 tsp
- Melted butter/oil-1\4 cup (I used oil)
- Jam- 2 tbsp.(vinegar one tsp. to dilute it)
1.Pre heat the oven at 180 C deg.Powder the sugar for easy mixing.Line the muffin tray.
2.Sieve flour with baking soda,salt and baking powder.
3.In a mixing bowl add powdered sugar and oil whisk it well till sugar dissolve.Then add yogurt & vanilla to it and mix.
4.Then gently fold the dry ingredients to it and mix gently, don't over mix as it may lead to hard muffins.
5. Add jam to it and swirl it, i just dilute the jam with a tsp. of vinegar.
7.Cool it completely on wire rack and enjoy.
