Boondhi Ladoo - My 300th post | Festive Sweet Recipe | Diwali Sweet

I am so happy to write my 300th post today.It had been one year and five months since i started to blog  and it journey  gained me  some good friends from all round the world.Your comments,suggestions,etc were like energy boosters for me and helped me to go on.Do continue to support me and since  its a special day lets celebrate it with a sweet as no occasion or festival are complete with out a sweet.

Ingredients:

  • Besan flour/Kadalai maavuu- 1&1\4 cup
  • Sugar- 1&1\2 cup
  • Cooking soda-a pinch
  • Water-as needed
  • Cashew nuts-few
  • Cloves-2
  • cardamon powder-1\2 tsp
  • Ghee-1 tsp
  • oil- to fry boodhi
  • Food color(yellow or orange)- a pinch(optional)

Method:

1.Sieve besan flour without any lumps.Add cooking soda  & food colour (if adding)to it and mix.Add water and make it to a consistency similar to dosa batter.



2.Take sugar with 3\4 cup water in a thick vessel to make sugar syrup.Let it boil.Add cardamon powder to it.Check for string consistency-one string consistency.Press it between your fingers if it form  single thread your sugar syrup is done.Switch it off.Fry cashew and cloves in a tsp of ghee and keep ready.



3.Heat oil to fry boondhi.To check for the correct batter consistency drop a spoon dipped into it on hot oil.If it forms balls and not tails the consistency is right else add water/flour to get it correct.

4.Hold a perforated ladle over the hot oil and pour a ladle of batter on it and spread it,it drop down like balls on the hot oil.Fry the boondhi not too crispy i.e when half fried drain it from oil and keep it on paper towel.Do it for all batter but after every frying wipe the back of the perforated ladle to get round boondi.

5.Add half of the fried boondi into the sugar syrup.Add the remaining half to the mixer and just pulse it and add it to the sugar syrup  with fried nut and mix well.Let it be soaked for some time.


6.When its is still warm make small balls of it.

Note:

1.The sugar syrup should be hot when you add the fried boondi.

2.Also make balls when it is hot else the you would be able to make it as the sugar will be crystalized.

3. Grinding  some fried boondi before adding to syrup is purely optional.
