As Diwali is nearing all will be busy preparing sweets and snacks for it.I too have many of it check it out.You can see blogsphere loaded with sweet recipe for it. i just took a change from it to a healthy one.Looking for a healthy ,easy side dish for chapati/roti try this one with spinach.
- Mixed vegetable-1 cup(carrot,beans & potato)
- spinach-10-12 leaves
- Onion-1 big ,sliced
- ginger garlic paste-1 tsp
- Sour curd/yogurt-1\3 cup
- turmeric powder-1\2 tsp
- garam masala-1\2 tsp
- Green chilly-3
- salt to taste
- Oil-1 tbsp
- jeera-1 tsp
- Coconut grated-1\4 cup
- cashew nuts-5-6
1.First blanch the spinach .put them in hot water,then wash well in cold water.then puree them in a blender.I added a green chilly along with spinach.Grind coconut and cashew to a fine paste with little water.
2.Boil the vegetables with water till its cooked.Drain the water and keep the cooked vegetable ready.Reserve some water.
3.Heat oil,temper with jeera followed by onion and green chilly saute till it becomes translucent.
4.Then add the spinach puree and saute sometimes till its raw goes.then add sour curd and mix.
5.Add boiled vegetable,ground paste,turmeric powder,salt and mix well.Lastle add garam masala and add the reserved water it needed.
6.Cook till everything binds together.
Serve with roti/chapati.Its was soo tasty.
1.Add green chilly according to ur spice level.
2.You can add vegetables like green peas,cauliflower,baby corn,etc.
