Christmas Greeting with a Special Rich Plum Cake




Merry Christmas to all readers.May the Baby Jesus full fill all your desire and wishes.On this special occasion i share with you the fruit cake i made with soaked dry fruits.I couldn't cut it and show since i baked it to take to my native along with the eggless version(previous post).





Preparation time-under 30 mins.
Soaking time-20 days to 1 year.
Baking time: 1 hr.
yields: 2 round cake

Ingredients:

  • Flour- 1 n 1/2 cup
  • Brown sugar-1 cup
  • White sugar-1/3 cup(to make caramel)
  • Dry fruits & nuts-1 n 1/2 cup(sultans,raisins,cashew,pine nut,pista,dried fig,tutti       fruity,walnut,almond)
  • Brandy/rum -1  to 2 cup(to soak)(i used brandy)
  • Baking powder-1 tsp
  • Cinnamon,dry ginger,nutmeg(all grounded)-1/2 tsp
  • Eggs-3






Method:

1.Chop all dries fruits and nuts.Drop them in a glass container and pour brandy over it.
Shake it  every day son that it mixes well.You can keep this for a year too.I just kept it for 15 days.

2.In a pan add sugar and heat it,it will start to melt and form brown colour(means its getting caramelised).Switch it off and add 1/4 cup water and mix well.Heat it again for few minutes and switch off.Your caramelised syrup is ready.

3.In a bowl  cream butter and brown sugar well .Add in one egg at a time and beat well.Meanwhile sieve flour with baking powder and spice powder.

4.Slowly fold in the flour mix and caramel syrup to it and mix well.Take the soaked dry fruits and nuts  along with brandy (if its there)in a bowl and add a tbsp of flour to it ,mix well.

5.Add this dry fruits to the beaten mixture and gently blend it.Bake it in a pre heated oven at 180 deg C for an hour or till a skewer inserted comes out clear.(mine got done it 1 hr.)





6.Cool it in wire racks and take it out.

Rich fruit/Plum cake is ready.
