Eggless Christmas Fruit Cake | Boil and Bake Method

Christmas without plum cake oh! God you can't imagine it.Last year i don't have oven to bake this but i made a simple cake using my cooker.This year i have soaked fruits and nuts in brandy for a traditional one.I also want to bake an egg less version,for this one didn't soak in alcohol but poured it after baking.

Preparation time: under 30 mins
Baking time: 1 hour.


  • Flour-1 & 1\2 cup
  • Sugar-3\4 th cup
  • butter/oil-1\2 cup(i used  canola oil)
  • Baking powder-1 tsp
  • baking soda- 1\2 tsp
  • Dry fruits & nuts-2 cup (approx)(raisins,badam,pista,walnut,tutti fruity,dates,pine nuts)
  • Yogurt-1 cup
  • vanilla essence-1\2 tsp
  • spice powder- 1 n 1\2 tsp(cinnamon,elachi seeds,dry ginger)
  • Brandy-1\4 cup(optional)

How i made:

1.Powder the spice in a dry mixer.Sieve flour with baking powder and spice powder.

2.In a bowl and dry fruits and 1\2 cup water and boil fro 5-7mins. and switch off.Add baking soda it will bubble up.Then add butter/oil and sugar.Add in the nuts and mix well.

3.When it is little cooled add in essence and gently fold in the flour and mix well.Add yogurt in between and mix well.

4.Line the baking pan with butter paper and pour the batter to it.

5.Bake it in a pre heated oven at 180 deg C for 1 hours or till done.(mine took 1 hour).

6.Cool it well and pour brandy over it(if using).


1.Baking time will vary from oven to oven.
