After getting some confidence in baking i started to try different cakes/muffins in it.And this is one such.
- wheat flour-3\4 cup
- flour-1\2 cup
- grated jaggery-1\3 cup
- oil-1\4 cup
- baking powder-1 tsp
- baking soda-1\2 tsp
- Hot water
1.Sieve both flours with baking soda and baking powder.Desseed the dates and soak it in some hot water.
2.In a mixing bowl add the flour mix and grated jaggery,mix well.Add in the soaked dates and mix.then add the water and form a dough with dropping consistency.
3.Lastly add in the oil and mix well.Pour it in a greased muffin pan and bake it in a pre-heated oven 25-30 mins at 180 deg C or till done.
Cool ,demould and serve.
1.You can vanilla essence also.
2.You can avoid adding water and add in milk.
3.You can make this with wheat flour/maida APF flour alone.
