Having kids at home i search for after school snacks for them.For a long time some dates were left in my pantry ,kids refused to eat it so i made this muffins.
Preparation time: 15 mins
Baking time: 20-25 mins
- APF/Maida-1 cup
- Wheat flour-1\2 cup
- Dark brown sugar-1\2 cup
- white suagr-1\4 cup
- Warm water-1\4 to 1\3 cup
- broken cashew-2 tbsp
- Baking powder-1 tsp
- baking soda-1\4 tsp
- vanilla essence-1\2 tsp
1.Deseed the dates.In a bowl add the dates,1\4 tsp of baking soda and some water.cook for a while .cool and smash it well.
2.Sieve both the flours with baking powder well twice.
3.To the mashed dates,add oil ,essence and both sugar and mix well.Add in the sieved flour in batch flour and mix well.Add warm water if its difficult to mix.
4.Lastly add the broken cashew and just mix.Pour in the muffin pan and bake it in a pre-heated oven for 20-15 mins at 180 deg C.
cool in wire racks and serve as snack for tea/coffee.
1.Baking time may vary from oven to oven.
2.Can also use regular baking pan and make round/square pan.In that case bake for 30-35 mins of till tooth pick inserted comes out clear.
3.Can use any nuts.
