Carrot stir fry is an easy and tasty side dish / kootu for rice which can be made in jiffy.Adding grated coconut give a unique taste.If you feel to omit coconut you can avoid but my advice is to add it.

- Onion-1 .chopped
- Green chilly-2 finely chopped
- Turmeric powder-1\2 tsp
- mustard seeds-1 tsp
- Oil- 2 tsp
- curry leaves-few
- salt to taste
- Grated coconut-1\4 cup
1.Clean and slightly peel the skin of the carrot and wash again.Grate the cleaned carrot in a grater.Cut onion,chilly and keep ready.
2.Heat oil in pan,pop out mustard followed by chopped onion ,green chilly & curry leaf.Saute for a while.Then add grated carrot,saute.
3.Add in turmeric powder & salt.Saute till all the water evaporates and it shrinks( be careful not to burn it).
4.When it decrease in volume ,switch off.Immediately add the grated coconut and toss well.
Tasty side dish ready to be served with rice.
