Making one pot meal is so easy as it save time mainly we don't need to worry about what to make for side gravy as this one pot meal can be served with simple onion raitha or as such.this vegetable brinji is some what similar to vegetable biryani except that this is cooked in coconut milk.

serves: 3 to 4
- Basmathi rice- 1 n 1\2 cup
- water-1 n 1\2 cup
- coconut milk-1 n 1\2 cup
- ghee +oil- 2 tbsp
- cashew & pine nuts-1 tsp each
- fennel seeds/saunf-1\2 tsp
- whole spices-bay leaf,cinnamon,cardamon & clove each one or two
- ginger garlic paste- 1 tsp
- turmeric powder-1\2 tsp
- red chilly powder-1 n 1\2 tsp
- beans-6,cut into 2 cms each
- Yellow or green peas-1\3 cup
- potato-1 ,peeled and cubed
- garam masala-1 tsp
- coriander & mint leaves-chopped,1\4 bunch each
- salt to taste
To grind coarsely:
- onion-1 big
- green chilly-2
1,Grind onion& green chilly coarsely.Clean rice and soak in water for 30 mins
2.Heat oil+ghee in a thick bottom pan/cooker.add in fennel seeds and all the whole spices,wait for the aroma to release.add the nuts to it.
3.then add the ground paste ,saute for some time.then ass ginger garlic paste,saute till raw smell goes.Add in all chopped vegetables followed by all masala powder,chopped leaves and mix well.
4.Add in measured water & cocnut milk.Add salt and check of spice level.add if needed.Cover and cook till liquid boils.
5.When it starts to boil add the drained rice to it,cover and cook it in low flame.Even can even pressure cook for 2or 3 whistle.
6.Use a fork to fluff up the rice.
Serve with raitha
1.You can make it even without adding red chilly powder.since my daughter need the food to be appetising i added.In that case increase green chilly.
2.you can use cauliflower too since i did not have i didn't use it.
