Hotel Sambar | Easy Hotel Sambar with Eastern Masala | Side dish for Idli / Dosa

Making sambar is not any difficult task just cook dal with veggies add in masala ,boil and tadka it.Every one will have thier own way of making sambar, some cook vegetables along with dal while some cook it separately and then add to cooked dal.I too have tried many different ways but this hotel sambar stand unique in taste,yes here i have used eastern sambar masala which gives an distinct flavor to it.When ever you see packets of this smabar masala don't forget to grab it as making sambar with it is so easy and tasty too.

cooking time: 15-20 mis
serves: 3-4

Ingredients:

  • Toor dal-1\3 cup (see notes)
  • Yellow pumpkin-3\4 cup ,( diced)
  • Brinjal-2 ,chopped( optional)
  • onion-1, medium sized
  • garlic pods-4 r 5 ( optional)
  • tomato-1
  • turmeric powder-1\4 tsp
  • jeera/cumin seeds-1\4 tsp
  • asafoetida- small piece
  • tamarind-very small berry size.
  • salt-to taste
  • eastern sambar masala-2 to 3 tsp 
  • coriander leaves- to garnish


For tadka:

  • oil-2 tsp
  • mustard seeds-1 tsp
  • curry leaves-few


Method:

1.Clean the dal well.Soak tamarind in water.To a pressure cooker add in cleaned dal,diced pumpkin,chopped brinjal (if using),onion,garlic,asafoetida,tomato,jeera,turmeric powder and 2-3 cups of water.Cook it for 3-5 whistles or till the dal is cooked.


2.when the pressure is released  open the cooker and mash the pumpkin pieces,Then add in eastern sambar masala,tamarind juice,salt and mix well.Keep in flame and cook till it boils and it becomes little thick.Switch off.

3.Heat a tadka pan  with oil ,temper with ingredients and add it to the sambar.Add in chopped caorinder leaves.

Tasty and aromatic hotel sambar is ready.


Serve for hot piping idlis.


Eastern masala has two variety sambar masala -plain sambar masala and Brahmin sambar masala.both are equally good.

Notes:

1.you can use mix of toor dal and moong dal.
2.Lastly while switching off add a tsp of ghee for more flavors.
3.You can make it with pumpkin alone.I usually like brinjal in sambar hence add it here.
