Preparation time:10 mins
Resting time: 20-30 mins
Cooking time:2 to 3 minutes for each paratha
Makes: 6 parathas (depends on size)
- Spinach/palak leaves- 15
- Whole wheat flour/atta-1 & 1\2 cup
- Oil-2 tbsp
- Jeera /cumin seeds-1\2 tsp
- green chilly-1,chopped
- ginger,chopped-1 tsp

Serving suggestion: curd or pickle
1.Clean the palak leaves and chop in finely.Similarly chop green chilli and ginger.
2.Heat a tsp of oil in a pan,pop out jeera followed by green chilly & ginger. Then add chopped spinach ,saute for some times till it shrinks in size.Switch off.You can use it directly in the dough or else add in to a mixer/blender and coarsely ground it.
3.Take wheat /atta flour, salt in a bowl.Add the ground spinach paste and a tbsp of oil ,first mix it well./then slowly add water and make a non sticky dough.cover and keep for some time.
4.Take lemon sized ball out of the dough and roll it by dusting some flour.Heat a tawa and cook the rolled paratha till brown spots appears on both side( i usually don't add oil while cooking but if you prefer you can drizzle some oil ).
Serve with curd or pickle.
