Sweets/desserts always cheer me up and hence I always prefer to start a new month with a sweet note.Kaju katli/ cashew burfi is commonly liked by all and my kids to love it.This Kesar Kaju katli has an extra flavour of saffron in it.I already have some methods of kaju katli in my little space,you can check instant method and regular method by clicking the link.

Makes: 6 pieces
- cashew nuts-1 cup
- sugar-1\2 cup
- milk-2 tbsp
- saffron strands-generous amount
- silver wraps-for decoration (optional)
1.Powder in cashew nuts in a dry mixer/coffee grinder.Soak saffron in warm milk.
2.Add sugar to a non-stick pan.Pour water so that the sugar just get immersed in it.Boil it in medium flame till all sugar dissolves and the syrup becomes frothy.Add the cashew powder to it and keep stirring.
3.Then add the saffron flavoured milk to it and keep stirring till the mix leaves the sides of the pan.(be quick).switch off and transfer to a ghee greased surface.
4.Roll it ,press the edible silver leaf over it (if using) and cut into diamond shapes.
Kesar kaju katli is ready to eat
1.If you are not able to roll the kaju dough after transferring from heat sprinkle little milk and roll.
