Its pouring like anything here in Chennai for more than a week and our roads are flooded.In my life time here I have never seen rain like this.Although it good as the water levels in the reservoirs have increased but daily life has become miserable with this continuous flow.We pray the rain God to have pity on us and stop the rain for some time.
Coming to this recipe which I made for my daughter's birthday dinner party.I just used carrots alone it and it taste good not spicy nor sweet.The spices I added in it are ginger & pepper but if you prefer you can add some other flavouring too.Preparation time: 5 mins
Cooking time: 15 mins
- ginger-1 cm length
- bay leaf-1
- oil-2 tsp
- pepper powder-2 tsp
- salt to taste
- corn flour- 1tsp ( optional)
- water-2-3 cup + 1\4 cup
1.Grate the outer skin of carrot,wash and chop into cubes.Heat oil in a thick bottom pan ( i used my cooker).Add in bay leaf and chopped ginger ,saute for a while.
2.Then add in cubed carrot and saute for some time till it is slightly cooked..Switch off and allow to cool.
3.Remove the bay leaf & transfer it to a mixer and make fine paste of it with some water.Again add the ground paste with 2 cups of water into the same cooker .Add in salt and cook for sometimes till it thicken a bit.
4.If using corn flour ,mix it with some water and add to it.Keep stirring and switch off when it becomes thick.
Add pepper powder and serve hot.
