Broccoli Soup | Cream of Broccoli

Broccoli is one of the fibre rich food which has many nutrients, minerals and vitamins.It supports heart's health.Its high anti-inflammatory fight helps to fight against allergies and inflammation. It so easy to have this vegetable, just chop it and get stir fry and eat it. Some days before I posted cauliflower soup and just followed the same method to make this soup.

Ingredients:
  • Broccoli-1 ,a small one
  • oil-2 tsp
  • bay leaf-1
  • onion-1
  • garlic flakes-2
  • milk-1\2 cup (boiled & cooled)
  • water-1\2 cup
  • pepper powder-1 r 2 tsp
  • salt -to taste


Method:

1.Boil water in a vessels and switch off..Add the choped broccoli florets in it and close it.This is to remove any germs/insects inbetween the florets.Drain after some time and chop in to pieces.

2.Heat oil in a pan,add bay leaf followed by onion and garlic and saute for a while.Then add in chopped broccoli pieces and saute till it gets cooked a bit.Switch off and cool a bit.


3.Remove the bay leaf and transfer it to a mixer/blender.add in milk and blend it to  paste.Tranfer the ground paste to a pan.

4.Add water ,salt ,pepper and milk(if any) to it and cook for a while till it get thick.Switch off.


Sprinkle some pepper powder on top and serve immediately.

 notes;

1.Pepper is only the spicy ingredients,adjust accordingly.

2.you can even reserve few florets ,top it and serve.
