No Bake Strawberry Cheese Cake | Women's Day Special



On this special day, I dedicate this post to all women in my life -my  mother, relatives, friends and virtual friends.Thank you all and I really feel blessed to be a woman.To make the day more sweet I here with share an easy dessert ,no bake cheese cake  with strawberry before the season of it ends.


Preparation time: 15 mins
cooking time:5 mins
setting time: 1-2 hrs

Ingredients:


  • Biscuits- 12-15 ( i used a mix of marie & milk biscuits)
  • Melted butter-1\4 cup
  • Strawberries- around 15 nos
  • sugar-2 tsp
  • gelatine- 1 n 1\2 tsp
  • Fresh paneer(cottage cheese)- 1\2 cup ( I made it from  1\2 litre full fat milk)
  • fresh yogurt- 1 tbsp
  • condensed milk- 1 tbsps
  • sugar-2 tsp(adjust)




Method:

1.Dissolve gelatin in 2 tbsp of water and wait for it to bloom.Clean,hull and chop the berries.Blend it to a pure with 2 tsp of sugar.Transfer it to a bowl.

2..Powder the biscuits in a dry mixer.transfer it to a bowl.Melt butter and add it to the powdered biscuit.Spread this mixture in a round pan .it will be easy to de mould if you  have a lose bottom pan.If not line  butter paper in a round pan and use.Keep the pan in fridge for some time to set.


3..To the freshly made paneer add a tbsp of yogurt and blends it well.Use this as your  cream cheese here.To it add condensed milk and sugar ( if needed) and blend it.Transfer it to another pan.


4.Just heat the bloomed gelatin using double  boiler method or in microwave for it to mix well.Add half of the gelatin solution to strawberry puree and half to cream chesse mixture and  mix well.

5.Pour first the cream cheese mixture over the biscuit base and keep it to set or some time.THen over it pour the strawberry mix.Refrigerate till it set.

6.Once set demould it,slice and serve.

It  has to be served chilled only.

Notes:

1.You can also use cream/whipped cream in the cream cheese mix.
