Saffron Rice | Saffron Flavored Pulao | Lunch Box Recipe

Saffron pulao with step by step pictures.

Yesterday was my son's birthday though we have postponed the celebration to Friday due to my daughter's exam I made a simple chocolate cake , this saffron rice and  chilli chicken for us.Earlier on one Sunday, I have tried this saffron rice and so was confident to go with it.

Saffron rice is so simple to make in no time where the hero ingredient is just saffron.I didn't add many spices as it may dominate.It doesn't have any hot spices and one can add it they prefer.

  • Basmati rice- 1 cup
  • saffron - generous pinch
  • warm milk- 1\4 cup
  • water- 2 cup
  • ghee- 2 tsp + 2 tsp
  • shahi jeera/ caraway seeds-1\2 tsp
  • cinnamon- 1 stick
  • salt to taste
  • cashew-few
  • raisins-few
  • almonds-few
  • onion, finely chopped- a hand ful.
  • sugar-1\4 tsp ( to get deep brown color)

1.Soak saffron in milk for a while.Clean rice and keep ready.

2.Heat  2 tsp ghee in a tadka pan ,fry cashew,chopped almonds and raisins one by one.Then add sugar to it and fry onion till it becomes deep brown.Keep aside it.

3.Heat remaining 2 tsp ghee in a thick bottomed pan , add in shahi jeera and cinnamon stick.Saute for few seconds.Then add in water , saffron milk and salt.Wait for  to boil .

4.When it starts to boil add the drained rice to it.Cover and cook till done.When done fluff it up with a fork.

5.Mix the fried nuts and onions to it.

Serve it with any spicy veg or non- veg gravy.We had it with chilli chicken.
