Jalebi is on of the most famous Indian sweet which is quite popular throughout the country.Imarti / Jhangari and jalebi almost involve the same procedure but the former is made with urad dal and the latter, jellaba with flour. The process of making this sweet ,jalebi involves making the batter and allowing it to ferment for 8-10 hours. But here I have used a shortcut method of using cooking soda.I slightly adapted this recipe from Tarla dal page but in it, they have used yeast which I altered by using baking soda.

makes 15 jalebis
- Maida / flour- 1\2 cup
- cooking soda 1/2 tsp
- curd/yogurt- 2 tbsp
- Oil - to deep fry
- saffron -few strands
- yellow food color -little( i used turmeric powder)
- pistachio- for garnishing
- sugar- 1 cup
- water- 1 cup
1.In a mixing bowl add in flour,cooking soda,food color,curd and mix well.then add 2 tbsp of water and make a batter which not too thick nor too thin.It should be in fold dropping consistency.
2.Combine sugar and water in a broad pan and cook in high flame.
3.In a small bowl add few strands of saffron and a tbsp of sugar syrup.Add this saffron- sugar mix to the sugar syrup and boil till it reaches one string consistency.switch off.
4.Fill the batter in a ketchup bottle or plastic bag.
5.Heat oil in a pan.Press the bag/bottle on hot oil forming coil-shaped jalebi moving from the inside to the outside.
6.Deep from on both sides .When done drain them and soak it sugar syrup for 3-5 mins.
P.S. at first it will be difficult to form perfect coil but will come in practice.
