Butterscotch Cupcakes | Butterless Butterscotch Muffins


Today I am with an easy cupcake where I have used butterscotch chips. Whenever I go grocery shopping I buy many new products aiming to try new recipes but it never happen and many times the products near the expiry date I have to trash it out with heavy heart.Yesterday I trashed out my fridge with products that I never used, I feel guilty for wasting money.So I have decided not to buy any new products hereafter.


This cupcake was born when I saw some of the leftovers butterscotch chips  which I bought months backs.Since I don't want to waste it  I made this easy recipe.

Preparation time 10 mins
Baking time 15-20 mins
Makes  6 cupcakes

Ingredients:

Flour- 1 cup
baking powder-1\2 tsp
granulated sugar- 1\2 cup
oil-1\2 cup
Egg-1
milk-1 \2 cup
essence-1 tsp ( vanilla or butterscotch)
Butterscotch chips-1\4 cup + some for topping







Method

1.In a  bowl add in sugar & oil,mix well.Add in egg and mix well.

2.Sieve flour with baking powder and add it to the sugar-egg mix .Add milk to get the correct consistency.Mix in the essence.

3.Add 1\4 cup butterscotch chips and fold it.

4.Scoop it to a lined cup cake pan.Top it with some more chips.

5.Bake it in a pre heated oven at 180 deg C till done.



6.Cool and serve .


Note;

1.Baking time may vary from oven to oven.
