Potato Sandwich | Bombay Sandwich | Easy Breakfast recipe


Sandwich is one easy breakfast which comes in handy during busy morning time.Sandwiches can be made with many vegetables and innovation in it are countless.Some sandwich recipes in my space include Nutella sandwich , sweet corn sandwich , sooji open  toast , Avocado sandwich , etc.

Mostly I prefer brown or multigrain bread but last Sunday it was out of stock at the shop and hence I was forced to buy white sandwich bread. As the expiry day was nearing I had to make something to finish it and hence made this sandwich for my daughter who was asking some snacks for her friends.
When I tasted one it was yummy with the freshness of that green chutney.It's easy to pack this for lunch or snacks box.

Ingredient:

  • Bread slices 
  • potato- 2
  • jeera -1\2 tsp
  • crushed pepper-1\4 tsp
  • mint-1\4 bunch
  • coriander leaves-1\4 bunch
  • chat masala-1\4 tsp
  • green chilly-1
  • ginger-a small piece
  • salt- to taste
  • lemon juice-1\2 tsp
  • tomato ketchup

Method:

1.Pressure cook the potatoes.Cool ,remove the skin and mash the potatoes well.To it add jeera,crushed pepper and salt.Mix and keep ready.

2.In a small mixer jar add in cleaned mint - coriander leaves,ginger,green chilly,chat masala,lemon juice, salt and little water.Grind it well.

3.To a bread slice first add a layer of this green chiutney.Place some prepared potato masala.Drizzle some tomato ketchup over it.Keep anothe slice over it .Place this in the sandwich maker and keep till done.




Serve hot as such or with sauce.



Notes:

1.You can use any bread variety.

2.You can also place some slices of onion,tomato over the mashed potato layer.
