Idli podi/gun powder comes as a saver when we are not in a mood to make any side dish for idli/dosa.It is unbeatable with some sesame oil.My kids are adherent lovers of this podi as they don't need any other side if this podi was there.I usually make this in a big batch and they stay fresh till last.The secret of it is dry roasting of the salt.If we do so this podi/powder won't spoil and till remain fresh.Do try this way and see.
- Red chilly-10 to 12
- Garlic - 1 full
- Urad dal-1\2 cup ( can use with skin dal also)
- Channa dal-1\3 cup
- Peanuts-1\3 cup
- Curry leaves- a handful
- Hing powder- 2 tsp
- Salt to taste
1.In a pan first add red chilly and garlic pods.Roast for a while.
2.Then add urad dal,channa dal and peanut one by one and roast it.
3.Keep in low flame and roast till nice aroma comes and the chilly is completely crisp.
4.Switch off and add curry leaves.Roast it in the heat that exist there.Remove from pan and cool.
5.Heat the same pan add hingp powder and salt.Roast for a while.
6.Powder the dal mix and salt in a mixer.
7.Cool the powder and store it.
Serve for idli / dosa.
