Another pongal recipe to add to my pongal collection which is made using rock candy/ kalkandu.Here I have used diamond-shaped candy which is available in all stores.Here I used a mix of water and milk to cook the rice and hence my pongal was so rich and yummy.Do give a try this year this kalkandu pongal and enjoy with your family.

1.Dry roast moong dal in a pan for few seconds, don't burn it.
2.In a pan or cooker add cleaned rice, dal and cook it with 1\2 cup milk and water till done.( if using cooker pressure cook for 3 whistles).
3.Add remaining milk and rock candy when rice ger cooked.When it gets thicken up switch off ( it further thickens as it gets cooled).
4.Fry cashew in ghee and add to it.
Serve hot or warm.
