Vegetable khichadi/vegetable bath comes in handy when there is no batter to do any breakfast or dinner. In upma, we usually don't add vegetable and it should be like breadcrumbs like texture whereas in khichdi one need not worry about the water as we have to make the khichdi semi thick.To serve this khichdi coconut chutney is the best combo.
Preparation time: 5mins
Cooking time: 15 mins
- Rava/sooji-1 cup
- Oil-2 Tsp
- Cashew nuts-few
- Mustard seed-1\2 tsp
- Green chilly-1 , chopped
- Ginger, finely chopped-1\2 tsp
- Mixed vegetables-1\2 cup( here i used carrot &beans)
- Turmeric powder-1\4 tsp
- Chilly powder-1\2 tsp
- Salt to taste
1.Dry roast rava for a minute and keep aside.
2.In the same pan heat oil, add cashew, mustard, chilly, ginger,onion one by one.Saute it.
3.Add the vegetable, salt,, turmeric powder, chilly powder, chopped tomato and saute for sometime.
4.Then pour 3-4 cups water.check for salt & add it needed.
3.When water boil, add the roasted sooji with continuous stirring.
6.At a stage, sooji will absorb all water and becomes like a mass.Switch off.
7.Serve hot with coconut chutney.
1.You can add the different vegetable like green peas, cauliflower or any veggie of your choice.
2.Always serve hot.
