Banana Black Currant Bundt Cake | Mini Bundt Cake


Best way to use overripe bananas is to bake with it.My kids will never touch that banana if they spot any black color on its skin.So I have to force them to eat when the skin is fully yellow.You can also make Unniappam with ripe bananas.

Some other banana recipes in my space are banana oats muffins, double chocolate banana bread, banana bread, banana choc chips muffins, ragi banana muffins, etc. To add to that collection I made this mini bundt cake with black currants. The cake turned out pillow soft and absolutely delicious.

Preparation time: 10 mins
Baking time: 15-20 mins
Makes  6 mini bundt cake

Ingredients:
  • Wheat flour- 1 cup
  • Maida-1\2 cup
  • Baking powder-1 &1\2 tsp
  • Baking soda-1\2 tsp
  • Oil-1\3 cup
  • Banana-2
  • Granulated sugar-1\2 cup
  • Honey- 2 tbsp
  • Milk-1\4 cup(adjust)
  • Vanilla essence-1 tbsp
  • Blackcurrant-1\4 cup
  • Chopped nuts ( I used badam)

Method:

1.Mash the banana well. To it add oil, sugar, honey and mix well.

2.Sieve both flours with baking soda and baking powder into it.


3.If you feel difficult to fold add milk and gently mix.Add essence.

4.Add blackcurrant and chopped nuts and just fold it.

5.Scoop into baking pan bake it in a preheated oven at 180 deg C till done.


6.Cool and serve as breakfast or as snacks for a cup of tea/coffee.

1.Baking time varies from oven to oven.

2.You can add nuts of your choice.
