Oats muffins make an excellent breakfast option as it is loaded with oats, egg, milk.To enhance more nutrition you can even add some nuts/dry fruits in it.For people opting for eggless option avoid egg and use yogurt/curd to get a moister muffin.
Some other muffin recipes are banana oats muffins, orange flavored oats muffins,
jam swirled muffins, carrot muffins, ragi-banana muffins, etc.I had some leftover oats bran which I powdered and used it here but you can use any oats, just powder it.

- Flour-1 cup
- Oats bran flour-1\3 cup( I just powdered broken oats bran)
- Baking powder-1 Tsp
- Oil/melted butter-1\3 cup
- Sugar-3\4 cup
- Essence-1 tsp
- Milk-1\2 cup(adjust)
1.Add flour, oats flour, baking powder in a mixing bowl.Mix well.
2.Add sugar, oil, egg and whisk it up well.
3.Add essence, milk and make a dropping consistency batter.
4.Scoop into lined muffin baking tray and bake in a pre-heated oven at 180deg C for 12-15mins or till done.
Cool and serve.
1.You can use any oats type, just coarsely powder it.
2.You can add some nuts or dry fruit in the batter.
