Tomato rice is a simple and easy recipe which is ideal for lunch box. If you have moreover leftover cooked rice try making this rice and have it with roasted papad or boiled egg. Mostly for dinner I make a new dish and if any cooked rice from lunch was too much we opt to make this rice and have it hot with papad.

- Cooked rice
- Oil/ghee-2 Tsp
- Cashew nuts- few
- Fennel seeds-1/2 tsp
- Onion-1, sliced
- Green chilli-1, sliced
- Garlic chopped-1/2 tsp
- Red chili powder-1/2 tsp
- Pav bhaji masala-1/2 tsp ( I used Everest brand)
- Salt to taste
- Coriander leaves
1. Heat ghee or oil. Add cashew nuts and fennel seeds. Fry.
2. Then add sliced onion, green chili, garlic and saute.
3. Add chopped tomato, chilli powder, pav bhaji masala powder and saute.
4. Add salt and mix well.
Serve or pack for lunch box.
