To get a crispy thatai one needs to roll it very thin else you will get a soggy thattai. Let us see how to make this.

Ingredients:wheat flour-1 cup rice flour-1/3 cup red chili powder-1/2 tsp soaked channa dal-2tsp curry leaves salt oil
1. Dry roast atta/wheat flour for a minute and cool it. 2. Soak channa dal in water for an hour. 3. To the wheat flour add rice flour, channa dal, hing, curry leaves, salt, hot oil and mix. 4.slowly add water and make a soft pliable dough.
5. Make lemon sized balls and roll each ball into very thin. prick with a fork to avoid puffing up when frying.
6. Deep from them well.
